We had our wonderful niece and nephew here this weekend. Keri is a vegetarian and I always like to try and make her something that we can all enjoy. I feel most of the time she ends up eating macaroni & cheese and veggies at our family events, so I always like to make something specifically for her that we can all enjoy!!!!
I make an amazing turkey, quinoa and spinach quinoa which on day two we always have meatloaf sandwiches with… and the request was in for meatloaf sandwiches from our nephew, Cole.
So Clare to the rescue.. I looked a couple of recipes on Pinterest and then came up with my own 🙂 It was delicious! I highly recommend one of these – there us a ton of really small chopping required for this recipe.
You can get this one like mine on Amazon here.. but there are lots of others to choose from.. it doesn’t have to be a Cuisinart, but these small ones are SO handy recipe.
I kept it simple by using these 90 second rice & quinoa bags… feel free to cook some rice and quinoa separately for this dish.
- 2 x Quinoa & Brown Rice 90 second bags cooked and added to a large bowl.
- 1 cubanelle pepper
- 1/2 green pepper
- 1/2 red pepper
- 1 small white onion
- 4 green onions
- 2 carrots
- 4 garlic cloves
- 1 15 oz can of black beans drained
- 1 15 oz can chickpeas drained
- 2 eggs
- 1/2 cup panko breadcrumbs
- 2 tsp liquid smoke
- 1 tbsp smoked cumin
- 1 tbsp smoked paprika
- 1 tsp celery salt
- 2 tsp crushed red pepper flakes
- 1 tsp cracked black pepper
- 1 tsp salt
For the Sauce
- 1 tin of pizza sauce ( I use Del Fratelli made with sea salt)
- 2 tbsp BBQ sauce
- 1 tbsp jalapeno hot sauce (I use Tabasco brand)
- 2 tbsp brown sugar
Heat oven to 350F
Pulse the beans and chickpeas to a rough chop. Add to bowl with rice.
Fine chop the peppers, onions, carrots and garlic. You want them very small so they will cook through quickly – I highly recommend the chopper above or a food processor.
Add all the additional ingredients to the bowls and combine well.
In a large casserole dish shape the mixture into a log shape.
In a saucepan heat together the sauce ingredients – until sugar is melted
Spoon gently over meatloaf and cook for 45 minutes
If using for sandwiches like us you can cook on the flat top each piece to crisp it up too!
